Yum. Strawberry Spinach Salad

With the 4th of July weekend approaching quickly I just want to share this yummy bbq side item. I have been making them for quite a while and recently got up the courage to share with friends while  entertaining. Something about strawberries and feta makes others a little query. I cant remember where I saw the recipe originally but I altered  it to contain the ingredients I like. I encourage you to do the same. I think the original contained walnuts and a different cheese option. The salad pictured further down in the post was created by my daughter she was rather proud and enjoys cooking:)

You with need:

1 bag of spinach

1 1bs of strawberries

6oz of feta cheese crumbled

1 cups of sliced almonds

1 bottle of you favorite oil based dressing or make your own  (I love RASPBERRY VINAIGRETTE on this salad.)

Rinse spinach, slice and rinse strawberries. Top spinach with strawberries, almonds, feta, and dressing as you please for the perfect summer treat.

Farm Fresh Eggs…..

I have taken the 1st steps in participating in the slow food movement…..purchasing farm fresh eggs:] By buying locally grown meat, eggs, veggies etc. you control where your food comes from. (I also find knowing the chickens these eggs came from are happy and free range comforting.) Most important you are supporting family farms. I know first hand what a struggle it is for the family farm to stay afloat in today’s world.
